Krautfleckerl- Hungarian Cabbage and Noodles

Ingredients

  • 1 Tbsp kosher salt
  • 4 c sliced cabbage
  • 1 c sliced onions
  • 2 Tbsp butter, 1 Tbsp bacon fat
  • 2 tsp sugar
  • 1/4 tsp freshly ground black pepper
  • 3 c cooked noodles
  • ·sour cream for serving
  1. Mix the salt and cabbage together and let stand 30 minutes.
  2. Rinse cabbage and Squeeze out as much liquid as possible. Heat the butter in a deep skillet, add the onions, cabbage, sugar and pepper.
  3. Cook over low heat, stirring frequently, until cabbage is browned, about 25/30 minutes.
  4. Add the noodles and toss to blend thoroughly. Serve with sour cream that has been drained in cheesecloth.
  5. (I thinly sliced smoked sausage and cooked until browned. I drained off the liquid and added the sausage with the noodles.)
