Ingredients
- 1 Tbsp kosher salt
- 4 c sliced cabbage
- 1 c sliced onions
- 2 Tbsp butter, 1 Tbsp bacon fat
- 2 tsp sugar
- 1/4 tsp freshly ground black pepper
- 3 c cooked noodles
- ·sour cream for serving
- Mix the salt and cabbage together and let stand 30 minutes.
- Rinse cabbage and Squeeze out as much liquid as possible. Heat the butter in a deep skillet, add the onions, cabbage, sugar and pepper.
- Cook over low heat, stirring frequently, until cabbage is browned, about 25/30 minutes.
- Add the noodles and toss to blend thoroughly. Serve with sour cream that has been drained in cheesecloth.
- (I thinly sliced smoked sausage and cooked until browned. I drained off the liquid and added the sausage with the noodles.)
