Jill’s Italian Gravy (Spaghetti Sauce)


1 – 28 ou. can crushed tomatoes

1 – 15 ou. can tomato sauce

1 – 6 ou. can tomato paste

1 medium onion, chopped

1 bell pepper, chopped

3-4 cloves of garlic, minced

olive oil

1 Tablespoon sugar

1/2 teaspoon salt

1/2 teaspoon pepper

2 teaspoons of dried oregano

2 teaspoons of parsley

water as needed (at least 1/2 cup)


Brown vegetables in oil.  Add tomatoes (3 cans).  Then add sugar, salt, oregano, parsley, pepper and water.

Simmer for 1 hour.  Add more water if it becomes too thick.


Macaroni and Cheese


1 small onion, chopped

1 to 1 1/2 cups uncooked elbow macaroni
1/4 cup margarine or butter
1/4 cup all-purpose flour

1/4 teaspoon ground mustard

1/4 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon pepper
2 cups milk

2 cups shredded or cubed sharp Cheddar cheese (8 ounces)


1 Heat oven to 350º. Grease 2-quart casserole. Cook and drain macaroni as directed on package.
2 Melt margarine in 3-quart saucepan over medium heat. Stir in onion, salt and pepper over medium heat until onion is slightly tender.  Stir in flour.  Cook, stirring constantly, until mixture is smooth and bubbly. Gradually stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
3 Stir in cheese until melted. Stir in macaroni until well coated. Spoon into casserole. Bake uncovered 20 to 25 minutes or until hot in center.

Zucchini Frittata (sort of)

Zucchini Frittata (sort of)


1 zucchinis
2 pasture raised eggs
1/3 cup Onion
Mushrooms (optional)
Cooked Sausage (any type would be good, I used one smoked sausage link)
Olives (optional)
Coconut Oil (also used a teaspoon of bacon grease)

Spiralize the zucchini (or grate) and set aside. Beat the eggs in a separate bowl. Combine all ingredients and mix together. You want just enough eggs so all the mixture is covered. Add a 1/2 tablespoon of coconut oil in a pan on medium heat (I also added a teaspoon of bacon grease). Then add mixture into the pan that you can later toss into the oven (cast iron skillet works best). Cover and cook until eggs on the bottom have cooked through, about 3 mins. Turn on your broiler and toss in your zucchini bake uncovered for about 3 mins. Just until eggs are all the way cooked through. Remove and serve.

This is also really nice with some avocado.

note: probably not quite enough eggs to consider it a Frittata.

I didn’t have the 3 optional ingredients and it was delicious.

Sweet Potato Holiday Bread

1 Tablespoon oil

1/2 cup butter, melted

1/2 cup granulated sugar

1/2 cup brown sugar

2 eggs, lightly beaten

1 1/2 cups leftover sweet potatoes, mashed

1 cup all-purpose flour

1 cup wheat flour (I will use all Spelt flour)

1/2 teaspoon salt

1 teaspoon baking soda

1 teaspoon ground ginger

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/3 cup hot water


1. Heat oven to 325 degrees and oil a 9×5-inch loaf pan.

2. In a large bowl, combine the butter and sugars.  Mix in the beaten eggs and mashed sweet potatoes and blend until smooth.

3. In a smaller bowl, combine the flours, salt, baking soda, and spices.  Add the dry ingredients to the sweet potato mixture in two steps, alternating with the hot water.  Pour the batter into the prepared loaf pan and bake in the center of the oven for 1 hour 10 minutes, or until a toothpick inserted in the center of the bread comes out clean.  Let cool completely in pan before removing.
